Pesto Eggs

Scrambled eggs with purchased pesto sauce and melted mozzarella cheese.
 

Ingredients

  • 1 tablespoon butter
  • 3 eggs
  • 1/4 cup milk
  • 1 carton prepared pesto
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
 
Method

Whisk together eggs, milk, salt and pepper. Gently mix in 1/4 of pesto. Preheat a nonstick skillet over medium heat. Melt butter in skillet and add egg mixture. Scramble eggs until cooked to desired consistency. Add remaining pesto to cooked eggs. Turn off heat amd add 1/2 of cheese. Divide pesto eggs between two plates and sprinkle with remaining mozzarella cheese. Serve with toast, rosemary roasted potatoes and orange juice.

 

Notes: Add as much pesto as you like.
