Piggy Pancakes

Ordinary pancakes become extra-ordinary when topped with maple flavored bacon, butter and real maple syrup.
Ingredients
- Pancake or waffle mix for 12-16 pancakes
- Additional ingredients required for pancake batter--per package directions
- 1 package maple cured bacon
- Butter or margarine
- Maple syrup

Method
Heat griddle to 375 degrees, fry bacon until crispy, then set aside on paper towels. Mix pancake batter and pour onto hot griddle in 8 inch circles. While pancakes are still wet, place strips of bacon on top and push into batter until covered. Cook pancakes until golden brown and fluffy. Serve with butter and maple syrup.
Notes: Even though this is a breakfast meal, it can be served at anytime. For a lighter option substitute turkey or Canadian bacon, margarine and light syrup.
