Pumpkin Peanut Butter Waffles

Start Halloween with these healthy pumpkin and whole wheat waffles topped with peanut butter, honey and bananas.
 

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground ginger
  • 1 pinch salt
  • 2 eggs
  • 1/4 cup firmly packed brown sugar
  • 1 cup pumpkin puree
  • 1 2/3 cups milk
  • 4 tablespoons butter, melted and cooled
  • 1/2 cup creamy peanut butter
  • 1/4 honey
  • 2-3 bananas, sliced
  • Confectioner's sugar for garnish
 
Method

Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a large bowl. In a second bowl, add eggs, sugar, pumpkin, milk, and butter then beat well. Gently fold in flour mixture. Cook according to waffle iron instructions. Cream together peanut butter and honey until mixed, then spread over waffles. Place banana slices on top and sprinkle with confectioner's sugar.

 

Notes: The kids love this for our Halloween Breakfast. You can substitue any fruit you like--tastes great with diced apples, too. I have a large pumpkin shaped cookie cutter that I use after the waffles are cooked.
