Pumpkin Pecan Pancakes

Whole wheat flour, pumpkin and pecans make these simple pancakes a healthy breakfast treat.
Ingredients
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon pumpkin pie spice
- 1 cup pumpkin
- 1 egg
- 1 cup milk
- 1 cup chopped pecans

Method
Combine flours, baking powder and pumpkin pie spice in a bowl then set aside. Combine pumpkin, egg and milk in a small bowl. Blend pumpkin mixture with dry ingredients. Pour batter, by 1/4 cups, onto a hot skillet or griddle, and sprinkle with chopped pecans, making four pancakes at a time. Top with butter and maple syrup.
