Pumpkin Whole Wheat Bran Waffles with Cream

Pumpkin and pomegranate seeds flavor these healthy buttermilk and whole wheat waffles.
Ingredients
- 1 cup unbleached white flour
- 1/2 cup bran
- 1/2 cup whole wheat flour
- 3 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1 tsp ground ginger
- Pinch salt
- 3 eggs, separated
- 1/4 cup firmly packed brown sugar substitute
- 1 cup canned pumpkin puree
- 1 2/3 cup buttermilk
- 4 tbsp butter, melted and cooled
- 3 cups whipped cream
- 2 cups pomegranate seeds

Method
In a mixing bowl, combine flours, baking soda, baking powder and salt. In another bowl, whisk together buttermilk, egg yolks, melted butter, brown sugar and pumpkin puree. Beat egg whites separately until stiff, but not dry. Preheat waffle iron. Add buttermilk mixture to flour, stirring briefly, being careful to not overmix. Add beaten egg whites to batter. Fold in with a few swift strokes, leaving a few fluffs of egg whites. Bake in a very hot Belgian waffle iron. Serve hot, topped with whipped cream and pomegranate seeds.
