Roasted Red Pepper Bacon Cheddar and Manche

This baked egg dish has plenty of good ingredients, the roasted red pepper, bacon and two cheeses, what a breakfast.
 

Ingredients

  • 6 eggs, beaten
  • 2 tbsp cold water
  • 2 oz Manchego cheese
  • 1/2 jar sweet roasted red peppers, diced
  • 1/2 lb bacon cooked and crumbled
  • 2 tsp butter
  • 2 tbsp fresh chopped parsley
  • Salt and pepper to taste
  • 2 oz mild cheddar

Method

Preheat broiler. In a medium mixing bowl, whisk eggs and water until light. To egg, add Manchego cheese, peppers, bacon, 1 tbsp parsley, salt and pepper, then combine well. Preheat a large oven safe saute pan over medium heat. Add butter and swirl around. Stir mixture and pour into pan, then allow to set up. Using a spatula, move egg from edges, while tilting pan, allowing egg to run into open spots, as if making an omelet, about 2 minutes. Remove from heat and sprinkle cheddar and remaining parsley evenly over top. Place under broiler, 2-3 minutes, or just until firm and slightly brown. Serve with fresh tomato slices and whole wheat bread sticks.
