Sausage Casserole with Bisquick

This simple and tasty breakfast dish has layers of sausage, mushrooms, onion and tomato, cheese and is all finished off with a biscuit topping.
 

Ingredients

  • 1 lb sausage, browned and drained
  • 1/2 cup chopped green onion
  • 1 4 oz can mushroom stems and pieces, drained or 1 8 oz package fresh sliced mushrooms
  • 2 medium tomatoes, chopped
  • 2 8 oz cups shredded mozzarella cheese
  • 1 cup Bisquick
  • 12 eggs
  • 1 cup milk
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
 
Method

In a greased 3 qt baking dish, layer sausage, onions, mushrooms, tomatoes and cheese. In a large bowl, whisk Bisquick, eggs, milk, oregano, salt and pepper then pour over cheese. Bake uncovered at 350 degrees for 45-50 minutes, or until top is set and lightly browned. Let stand 10 minutes before serving.
