Soft Egg Toast

Five minutes is all you need to prepare a healthy, hearty breakfast of soft boiled eggs and toast.
 

Ingredients

  • 4 large eggs
  • 4 slices bread
  • Salt and pepper to taste
  • 2 tablespoons butter

Method

Toast bread, then butter with half tablespoon butter, and cut into 2 inch squares. At the same time, soft cook eggs for 3 minutes in boiling water. Peel off half of shell and scoop out egg then pour over toast squares. Chop up egg whites with a fork while mixing everything together. Season with salt and pepper.

 

Notes: I like homemade bread for the toast. But the best one ever was a local bread shop had Fissilli bread, a long skinny round French style bread about 1 to 2 inches in diameter. I sliced the bread into small discs and toasted it with olive oil, salt and pepper to make croutons for salad that night and made everyone in town "egg toast" for breakfast.
