Sour Cream Waffles with Spiced Apple Topping

These waffles are a great fall brunch treat. The spiced apple topping is the perfect compliment to the sour cream waffles.
Ingredients
- Topping:
- 2 tablespoons butter
- 2 cups peeled, cored and sliced apples
- 1/3 cup raisins
- 1/2 cup apple juice
- 1 tablespoon ground mulling spices
- 1 cup maple syrup
- Waffles:
- 1 egg yolk
- 1 cup sour cream
- 1/2 cup milk
- 3 tablespoons butter, melted
- 1 cup sifted all purpose flour
- 2 teaspoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg white, beaten to stiff peaks
- 1/4 cup wheat germ
- 1/2 cup finely chopped walnuts
- 1-1 1/2 cups vanilla yogurt

Method
In a small skillet, melt butter on medium low setting. Add apples and raisins, and saute 4 minutes. Stir in apple juice and spices, cook until apples are tender, 6-8 minutes. Stir in maple syrup. Remove from heat and keep warm until needed. In mixing bowl, blend egg yolk, sour cream, milk and butter. Sift together dry ingredients and stir the two mixtures together, then fold in beaten egg white. Bake on medium high heat in a preheated waffle iron until golden brown. Serve waffles with a heaping spoonful of vanilla yogurt and warm Spiced Apple Topping spooned on top.
