Spanish Omelet

This omelet has sausage, potato, onion and ham. The addition of the seasoning salt and garlic really makes this omelet great.
 

Ingredients

  • 1/4 lb regular sausage
  • 1 medium potato
  • 1/4 small onion, diced
  • 1/4 cup chopped ham
  • 2 mushrooms, chopped
  • 1/4 tsp seasoning salt
  • 1/4 tsp granulated garlic
  • 1/4 tsp pepper
  • 1 dozen eggs
  • 1 tbsp mayonnaise
  • 1/2 cup grated cheese

Method

Scrub potato, poke holes in all sides, microwave 2 minutes, then peel and chop. Season with seasoning salt, garlic and pepper. Brown sausage, drain grease, reserving 1 tbsp for sauteing. In same pan, saute onions and potatoes in reserved grease. Cook about 5 minutes, over medium high heat, until potatoes begin to brown and onions start to become opaque. Return sausage to pan and add mushrooms and ham then cook 2-3 minutes. Crack eggs in a separate bowl, whisk in 1 tbsp mayonnaise, and stir in cheese. Turn heat to medium, and stir in eggs. Using a rubber spatula, stir mixture slowly until eggs are fluffy. Do not overcook. Eggs should still be moist.
