Spiced Sweet Potato Corn Bread Muffins

These healthy and flavorful muffins are a great way to start out your day. Enjoy the wonderful combination of flavors including cornmeal, flax seed, applesauce, and mashed sweet potato.

  • Servings: 3 dozen


2 cups All-purpose Flour
2 cups Yellow Corn Meal
1 cup Granulated Sugar
2 tb Baking Powder
2 tb Ground Flax Seed
1 tsp Salt
2 cups 2% Milk
3 Large Eggs, lightly beaten
⅓ cup Canola Oil
⅓ cup Apple Sauce, unsweetened
6 tb Butter, melted
1 cup Mashed Baked Sweet Potato
1 tb Ground Allspice


Preheat oven to 350 degrees. Prepare muffin tins by spraying with non-stick cooking spray. (recipe makes about 3 dozen muffins). Combine dry ingredients (first six ingredients) in a large bowl and whisk until blended. In a separate bowl, combine next 5 ingredients (milk through butter) and whisk until well blended. Pour wet ingredients into dry ingredients and stir with a spoon just until blended. Stir in sweet potato and allspice until well blended. Fill prepared muffin tin cups about 2/3 full. Bake in preheated oven at 350 degrees for approximately 15 minutes, just until edges are lightly browned and toothpick comes out clean.
