Spicy Fiesta Breakfast Cups

These egg, cheese and Canadian bacon breakfast are cups quick, easy, and tasty.
 

Ingredients

  • 2 large flour tortillas, quartered
  • 6 slices Canadian bacon, cooked
  • 6 large eggs
  • 1 1/4 cups pepper jack cheese, grated
  • 1 1/4 cups diced green chilies, drained
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 cup chopped fresh tomatoes
  • 12 cilantro sprigs
 
Method

Preheat oven to 350 degrees. Spray a jumbo, 6 cup muffin pan with nonstick cooking spray. Carefully tuck one tortilla quarter in each of the 6 muffin cavities. Allow tortilla to slightly hang over edges. Place one slice bacon in each tortilla lined cavity. Crack one egg on top of each bacon slice. Sprinkle an equal portion of cheese over each egg. In a small mixing bowl, combine green chilies, cayenne pepper, cumin and salt. Mix until well combined. Top each cup with an equal portion of the green chili mixture. Bake 20 minutes or until eggs are set. Remove from oven and sprinkle each breakfast cup with an equal portion of tomatoes. To serve, place one breakfast cup onto a 10 inch serving plate and garnish with a cilantro sprig.
