Strawberry French Toast Breakfast Casserole

Refrigerated cinnamon rolls streamline the prepartion for this rich, strawberry breakfast casserole.
 

Ingredients

  • 1/4 cup butter, melted
  • 2 12.4 oz cans refrigerated cinnamon rolls with cream cheese icing
  • 6 eggs
  • 1/2 cup heavy whipping cream
  • 2 tablespoons vanilla
  • 1 cup pecans chopped
  • 1 cup halved fresh strawberries
  • 1 cup strawberry syrup

Method

Preheat oven to 375 degrees. Pour melted butter into an ungreased 13 X 9 glass baking dish. Separate cans of cinnamon rolls into 16 rolls and set cream cheese icing aside. Cut each roll into 8 slices and place slices on top of butter in baking dish. In a medium mixing bowl, beat eggs on medium speed for 2 minutes. Beat in cream and vanilla then pour mixture over rolls and butter. Sprinkle with pecans and strawberries. Drizzle strawberry syrup over pecans and strawberries. Bake 20-25 minutes or until golden brown, then cool 5 minutes. Meanwhile, remove covers from cream cheese icing and place icing in microwave for 5 seconds. Stir and microwave 5 more seconds or until thin enough to drizzle. Drizzle icing over top of Strawberry French Toast Breakfast Squares. Cut into 12 squares and serve.

 

Notes: In this breakfast dish you have the warm, sweet satifying comfort of the French toast, combined with the freshness of summer strawberries. The pecans add a delicious crunch to the French toast and fresh fruit
