|4 cups||Fresh Strawberries, washed and hulled|
|½ cup||Unsweetened Pineapple Juice|
|1 tsp||Lime Zest|
|2 Tbsp||Lime Juice|
|2 Tbsp||Mint Leaves|
|1 box||Fruit Pectin|
Crush the strawberries in a large bowl using a potato masher. Add the pineapple juice, lime zest and juice. Muddle the mint leaves in a small glass with the rum, then add the rum to the strawberries. Combine the sugar and pectin, then add to the fruit mixture, stirring with a spatula. Let stand for 30 minutes, stirring several times to dissolve. Pour into clean glass jars, or plastic containers. Leave 1/2 inch on top, cover and refrigerate.
This can be frozen.
