Add a little mojo to your morning toast with the flavors of strawberry, pineapple, lime, rum and mint.

  • Servings: 3 cups


4 cups Fresh Strawberries, washed and hulled
½ cup Unsweetened Pineapple Juice
1 tsp Lime Zest
2 Tbsp Lime Juice
2 Tbsp Mint Leaves
2 Tbsp Rum
1½ cups Sugar
1 box Fruit Pectin


Crush the strawberries in a large bowl using a potato masher. Add the pineapple juice, lime zest and juice. Muddle the mint leaves in a small glass with the rum, then add the rum to the strawberries. Combine the sugar and pectin, then add to the fruit mixture, stirring with a spatula. Let stand for 30 minutes, stirring several times to dissolve. Pour into clean glass jars, or plastic containers. Leave 1/2 inch on top, cover and refrigerate.

Helpful Tips:

This can be frozen.
