Ingredients:
| 4 cups | Fresh Strawberries, washed and hulled |
| ½ cup | Unsweetened Pineapple Juice |
| 1 tsp | Lime Zest |
| 2 Tbsp | Lime Juice |
| 2 Tbsp | Mint Leaves |
| 2 Tbsp | Rum |
| 1½ cups | Sugar |
| 1 box | Fruit Pectin |
Directions:
Crush the strawberries in a large bowl using a potato masher. Add the pineapple juice, lime zest and juice. Muddle the mint leaves in a small glass with the rum, then add the rum to the strawberries. Combine the sugar and pectin, then add to the fruit mixture, stirring with a spatula. Let stand for 30 minutes, stirring several times to dissolve. Pour into clean glass jars, or plastic containers. Leave 1/2 inch on top, cover and refrigerate.
Helpful Tips:
This can be frozen.
