Sunday's Pancakes

Pancakes made from a batter with strawberries or raspberries are topped with an orange marmalade butter and drizzled with rich chocolate sauce.
Ingredients
- Orange Butter:
- 1 cup marmalade
- 1 cup butter, at room temperature
- 3/4 cup powdered sugar
- 1 1/2 tsp. orange zest
- Chocolate Sauce:
- 1 cup heavy whipping cream
- 7-oz. bar milk chocolate, finely chopped
- Pancakes:
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg, lightly beaten
- 1 cup buttermilk
- 1 cup fresh raspberries or chopped strawberries: rinsed and drained well
- Vegetable oil, for brushing griddle or skillet

Method
In a small bowl, stir together the orange butter ingredients until well combined. Cover and set aside. Bring cream to a boil in a small saucepan, over medium-low heat. Pour hot cream over chocolate in a bowl, gently whisking until smooth; set aside. Whisk together flour, baking soda and salt; add egg and buttermilk stirring until smooth. Fold in fruit to blend well. Heat a griddle or large heavy skillet over medium-high heat until hot enough to make drops of water scatter; brush with oil. Spoon a scant 1/4 cup batter for each pancake onto skillet; cook until bubbly and edges turn light brown. Turn over and cook until golden brown on second side. Plate pancakes, spread with orange butter, and drizzle with chocolate sauce.
Notes: Makes about 14, 3-inch pancakes.
