Tofu Breakfast Burritos

This great vegetarian breakfast is packed with protein and flavor. The feta cheese and mozzarella top this off perfectly.
 

Ingredients

  • 2 flour tortillas
  • 1/4 cup salsa
  • 2 eggs
  • 1/4 lb firm tofu
  • 1/4 cup feta cheese
  • 1/4 cup part skim mozzarella
  • 1/2 tsp dried basil
  • 1/4 tsp salt
  • 1/4 tsp oregano
  • Pepper to taste

Method

Beat eggs and tofu together until tofu becomes small pieces. Saute eggs and tofu in a nonstick pan. Add oregano, basil, salt and pepper. Heat tortilla over open flame or in a saute pan. Place egg and tofu mixture into tortillas then add feta. Roll up and top with mozzarella. Microwave about 30 seconds, or until cheese is melted. Top with salsa.
