Ingredients:
| 7 | Eggs |
| ½ cup | Water |
| ½ cup | Picante Sauce |
| 2 Tbsp | Chopped Fresh Cilantro Leaves |
| ½tsp | Dried Oregano Leaves, crushed |
| 1 cup | Cooked Regular Long Grain White Rice |
| ¾ cup | Crumbled Feta Cheese |
| ½ cup | Shredded Cheddar Cheese |
| 3 | Italian Plum Tomatoes, sliced |
Directions:
Heat oven to 400. Spray a large oven safe skillet with cooking spray and put in oven to heat for about 5 minutes. Beat eggs and water with a whisk or fork in large bowl. Stir in picante sauce, cilantro, oregano, rice, feta cheese and cheddar cheese. Pour egg mixture into prepared skillet. Top with tomatoes. Bake for 40 minutes or until a knife inserted in center comes out clean. Makes 6 servings
