Tortilla Breakfast Cups

These breakfast cups are made with all the fixings, ham, cheese, eggs and the perfect blend of cilantro and sour cream. Great for brunch.
Ingredients
- 4 6 inch corn tortillas
- 4 large eggs
- 1/2 cup liquid egg substitute
- 1/2 cup low fat sour cream
- 2 tablespoons chopped fresh cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup diced ham
- 1/4 cup + 2 tablespoons shredded Monterrey Jack cheese, divided
- 1/2 cup salsa

Preheat oven to 350 degrees. Prepare 4 individual, shallow 5 oz baking dishes with nonstick cooking spray. Soften each tortilla by microwaving 10 seconds at high power. Press each tortilla into a baking dish, flattening bottom and pleating sides as needed. Use kitchen shears to trim any edges that overhang the dish. Sprinkle ham and 1/4 cup cheese evenly among dishes. In a medium bowl, whisk together eggs, egg substitute, sour cream, cilantro, salt and pepper. Pour an equal amount into each dish. Sprinkle remaining cheese evenly over egg mixture. Place dishes on baking sheet and bake 25-30 minutes. Turn on broiler for 2-3 minutes to puff and lightly brown casseroles. Remove from baking dishes and serve hot with 2 tablespoons salsa on the side of each plate.
